This herbal tea is a very light and flavorful beverage. Sweetened with honey, which also lends a mild taste, the herbal tea has a hint of lemon juice and is served hot. Good for the body, it refreshes and engergises!
5 cups water
1/2 cup chopped fresh mint or 2 tablespoons mint flakes
1 tablespoon dried sage leaves
1 tablespoon dried lemon verbena or 1 teaspoon dried tarragon leaves
4 teaspoons light honey
4 teaspoons lemon juice
4 lemon wedges
4 mint sprigs
Directions
In a medium size saucepan, bring the water to a boil over moderately high heat about 5 minutes.
Pour the boiling water into a warmed teapot and add the mint, sage, and lemon verbena; cover and steep for 5 minutes.
Strain the tea mixture into 4 cups or mugs; stir 1 teaspoon honey and 1 teaspoon lemon juice into each, and, if you like, garnish with a lemon wedge and a mint sprig.
